Easy Chicken And Rice Soup

This is one of my all time favorite comfort food meals. I don’t know why but every time I make this soup it hits home and takes me back. EVERY TIME! Maybe mom used to make this back when my life was at it’s best point or something? Back when I was 7 and life’s biggest worry was would I be able to go to my best friends sleepover that Friday. Lol!!!

This meal is also really stinking cheap. It basically calls for things that are already in your pantry. So here is the soup recipe that is just so comforting to me. Also, I would like to add that this soup tastes alot like Campbells Chicken And Rice soup so the kids should love it. I know my daughter always eats so much it makes her sick so I have to force her to stop!

 

Easy Chicken and Rice Soup

Ingredients

  • 1/2 onion, finely chopped (about 1/2 cup)
  • 2-3 medium-sized carrots, peeled then thinly sliced (about 1/2 cup)
  • 2 cloves garlic, minced
  • 1-1/2 Tablespoons extra virgin olive oil
  • homemade gluten-free seasoned salt (see notes for recipe) and pepper
  • 2 chicken breasts, cut into bite-sized pieces
  • 64oz (8 cups) gluten-free chicken broth
  • 1 cup long grain white rice

 

Start by heating 1-1/2 Tablespoons extra virgin olive oil in a large soup pot over medium heat. Add 2-3 medium-sized carrots that have been peeled then thinly sliced, and 1/2 chopped onion. Season with homemade seasoned salt and pepper then place a lid on top and saute until the vegetables are very tender, 5-7 minutes, stirring occasionally.

Next add 8 cups (64oz) chicken broth then turn the heat up to high and bring to a boil.

Pour in 1 cup long grain white rice then stir to combine. I like Lundberg Farms Jasmine Rice but you can use whatever you have on hand – that’s the beauty of this easy, fridge and pantry-staple soup supper! Just make sure it’s not a short grain rice like arborio or sushi rice. Next add 2 chopped chicken breasts that have been seasoned with seasoned salt and pepper then stir to combine (the chicken will cook while the rice is cooking.)

Turn the heat down to medium then simmer until the rice is tender, 15-20 minutes. Pop the lid back on top of the pot then let the soup rest off the heat for 5 minutes to make sure the rice is really soft. Taste and add more seasoned salt and pepper if necessary then ladle into bowls and serve!
I love to get some kind of bread or rolls like artisan bread to butter up and serve with the soup. It’s sooooo delicious!!!

What Makes This The Best Hibachi Recipe In The World?


 

The butter!!! Oh my geez, there is quite a bit of butter in this but it is so worth it and the butter is what gives this recipe a smooth and creamier finish. So GOOD!!! These noodles are definitely not for someone that is looking for a healthier alternative to chinese noodles. However, if you are looking to knock the socks off of your family and friends then definitely give this recipe a go! I usually use about 2x the amount of butter that the recipe calls for because it give so much more flavor but try it how it originally is first and see how you guys like it!!

Hibachi Noodles

  • Prep Time: 5 mins
  • Cook Time: 20 minutes

Ingredients

  • 1 lb. linguine or noodles of your choice, cooked al dente
  • 3 tablespoons butter
  • 1 tablespoon garlic, minced
  • 3 tablespoons sugar
  • 4 tablespoons soy sauce
  • 1 tablespoon teriyaki sauce
  • Salt and pepper to taste
  • 1 tablespoon sesame oil
  • 1 tablespoon sesame seeds

Instructions

  1. Over medium high heat in a wok, melt the butter
  2. Toss in garlic and saute until fragrant
  3. Toss in noodles and stir to mix
  4. Add sugar, soy sauce, teriyaki sauce and combine
  5. Season with salt pepper
  6. Remove from heat and drizzle in sesame oil, tossing to mix
  7. Dish and serve hot sprinkled with sesame seeds

If you guys decide to use sesame oil then that is totally ok but if you can’t afford it or you just don’t want to get out and go to the store (always me) then you can do without it. It does add a little more flavor but it still tastes outstanding without. Also, Sesame seeds are just for decoration. Unless you are looking to entertain or go all out then by all means go for it!! When I make these I usually like to pair them with my sweet and sour chicken that I posted in another post and some egg rolls!

Strawberry Cinnamon Rolls To Explode Your Taste Buds

 

Are You An Avid Cinnamon Roll Lover?

This is a brilliant fruity twist to a nationwide classic. The strawberry’s in the middle of these rolls give it a beautiful red color and when you combine it with the smoothness of the cream cheese icing then you will get a flavor bomb in your mouth! Personally, I don’t care for lemon flavored things so I left the lemon stuff out but hey if you like that stuff then go for it!!

Delicious strawberry cinnamon rolls made with Lucky Leaf Pie filling and a quick and easy dough recipe! These will be in the oven in no time at all!
Serves: 9-12
Dough Ingredients:
  • 3¼ cups flour
  • 2 tsp instant yeast
  • ¼ cup white sugar
  • ½ teaspoon salt
  • 1 egg
  • ¼ cup water
  • ¾ cup milk
  • ⅓ cup butter, softened

 

Filling Ingredients:

  • 21 ounce can Lucky Leaf Strawberry Pie Filling
  • 2 teaspoons cinnamon
  • ½ teaspoon sugar
  • Lemon Cream Cheese Frosting:
  • 4 ounce cream cheese, softened
  • 3 Tablespoons butter, softened
  • 1 cup powdered sugar
  • ¼ cup half and half
  • 2 teaspoons lemon juice
  • 1 Tablespoon lemon zest (one lemon)
  • 1 teaspoon vanilla
Instructions
  1. To make the dough: In a small saucepan over medium low heat add the milk and butter. Stir until the butter has melted and remove from heat. Let stand until luke warm temperature.

 

  1. In a large mixing bowl whisk together 2¼ cups flour, yeast, sugar, and salt. Add to the stand mixer with dough hook attached. (You can also make this by hand, just knead until smooth once all of the ingredients are added.) Add the egg and water and mix until just starting to combine. Slowly add in the milk mixture and 1 cup of flour until the dough starts to form and become smooth. Let the dough rest for 10 minutes.

 

  1. On a lightly floured surface, roll the dough into a large 9×15 square. About ¼-1/2 inch thick. Spread strawberry pie filling evenly on top of the dough. In a small bowl combine the cinnamon and sugar and sprinkle on top of the strawberry filling. Roll up the 15 inch side into a log and pinch the seams. Cut into 9-12 slices depending on how thick you want your cinnamon rolls. Place in a greased 9×13 inch pan and cover with a damp cloth and let rise for 30 minutes.

 

  1. Preheat oven to 375 degrees. Bake for 30 minutes or until just golden brown on the tops.

 

  1. To make the glaze: Beat together the cream cheese, butter, and powdered sugar until smooth. Add the half and half, vanilla, lemon juice and lemon zest until combined. Frost over warm cinnamon rolls and enjoy!

 

 

I make these at LEAST once a year for holidays and everyone always stands in the kitchen waiting for the oven to get done because it smells so good and they are so sweet and flavorful!! Oh and one more thing. If you buy bakers sugar instead of confectioners sugar then the flavor won’t turn out chalky like those edible chalk sticks that the kids buy at the store for $0.50. Bakers sugar is a bit more expensive but it comes with alot and it will last you a long time. The sugar is more fine than normal sugar so when you mix it with milk it makes a delicious tasting icing.

Homemade Chinese Food For Dinner Tonight!

The Secret To The Perfect Sweet And Sour Chicken At Home


Chinese food in our house is a must have and if you’re like me then you get kind of nervous trying to make it because it can turn out tasting like a sorry attempt at chinese food cooking lol. I have been determined to perfect it for many years but I still have problems with it every now and then but I finally got it down! My daughter and husband absolutely love this meal. It’s definitely in the top 3 favorites for them.

I would just like to point out that I found this recipe online a few years back and just kind of kept working at it and finally perfected it to our liking. I don’t own any of these pictures or the original recipe.

So lets get started then. The secret that leaves this meal bursting with flavor is the cornstarch for the breading and apple cider vinegar for the sauce. The recipe calls for rice vinegar but I like to use apple cider because the flavor is so much better! But you can really use either one because they both make it taste pretty stinking great!

This is a recipe for the famous sweet and sour chicken!! This is a sweet and salty savory dish but make sure you keep napkins handy especially for little ones that like to play with their food because the sauce can get a little sticky!

 

Ingredients:

1 lb chicken (cut into bite size pieces)
1/2 tsp kosher salt
1/4 tsp pepper
1/4 tsp garlic salt
3/4 cup corn starch
2 large eggs, whisked
1/2 cup canola oil

Sweet and sour sauce:

1 cup sugar
1/3 cup ketchup
1 tsp garlic salt
1/2 cup + 1 TB rice vinegar (distilled or apple cider will work too)
1 TB soy sauce

Directions

 

  • Line a rimmed baking sheet with foil. Set aside.
  • Place the chicken, corn starch, salt, pepper and garlic salt in a large ziplock bag and shake until the chicken is evenly coated.
  • Heat 1/4 cup oil in a large frying pan over medium heat. Dip the chicken in the egg mixture and place in the frying pan with a fork. I did half the batch first. Fry both sides of the chicken for about 2 minutes a piece and place chicken on the pan. Dispose of the burnt oil and then heat up the rest of the oil and finish the chicken.
  • Pre-heat oven to 325°F. In a medium size bowl whisk together all of the ingredients for the sauce. Next you’ll pour the sauce over the chicken and bake for 20 minutes.
  • Serve with steamed rice and vegetables. Enjoy!

I personally like to add some chopped green onion on top to give it a nice finish. Like I said, My daughter and husband are always fighting over the last few bits of chicken in the pan because it is just that delicious! What My Failures Have Taught Me


When I was 21, I was a slender figure even after having my 2 kids. I felt great and had alot of energy but then a year later I started down my road to failure and obesity and depression. I started gaining weight rapidly, then decided not to wear my makeup as much, then not at all. I started putting my hair up in a ponytail because I thought “What’s the use?” About 3 years later I realized where I went wrong. Thinking “What’s the use?” is where I went wrong. My failures were that I just gave up.

I learned that the whole point of eating healthy wasn’t to lose weight (although it is a perk!). It is to be healthy from the inside out. It is to be able to live long enough to see my babies grow up, graduate, get married, have babies of their own. I want to live life comfortably without the burden of diabetes or high blood pressure. My failures of giving up and not caring have taught me that it isn’t worth thinking that. It isn’t worth not growing old with my husband or babies. So I decided enough is enough.

 

The Turning Point 


I came across a facebook video post one day while scrolling through my news feed and it was about this girl who I’ve never met, and who was jumping all around the screen yelling with excitement and super happy and she looked pretty fit as well.

My first thought was “What is she so happy about? My goodness.” So I got annoyed and I just skimmed right past it. A couple of weeks later this same video pops up on my news feed. Once again I flew right past it. about 3 weeks later it shows up YET AGAIN! So FINALLY I watch the whole thing through and I realize that this girl is just full of pure joy and happiness and nothing else. Why? Because she used to be me. She used to be the girl that didn’t want to have her picture taken, didn’t want to go to the beach because she didn’t know what to wear that wouldn’t show off that extra jiggle on her arms and legs.

She isn’t that girl anymore. She is fit, healthy, married, and expecting her first child. I thought she must be taking some kind of fat burning pills and doing diets where she can’t enjoy real food and is eating all kinds of nasty food. But of course, my interest got the best of me and I clicked on her link to see how she did it.

It Was The Simplest Thing Ever


 

It turns out that she is doing absolutely nothing but working out and eating healthier. I took a look at her menu thinking “Well, if she isn’t taking dangerous supplements or drugs then the food must be really healthy and that means it is probably disgusting!” I signed up for her online site and took a look at her menu and realized I was way wrong. Yes, she doesn’t eat fried foods, she doesn’t eat hersheys chocolate bars, etc but she eats really really good healthy food. I’m not talking about lean cuisine healthy tv dinners because that stuff is a big fat lie. Anything processed is a LIE! At least that it what she taught me.

Guys, I’m not selling you anything I just want to clear that up right now. I have no affiliation to this girls website, products or anything. I just want you guys to have the opportunity that I have to get your body healthier and do it the easy way without cutting out what you want to eat the most. Her site is full of tip videos, workout videos, recipes, and step by step videos on how to make the recipes, giveaways and more. It’s just such a good opportunity to get your body back and do it happily. Forget Weight Watchers, Atkins, Nutrisystem, and other fad diets.

I Escaped My Postpartum Depression

amelias bed hairIf you have ever had postpartum depression after having a baby then you have more than likely had at LEAST one person try and cheer you up the wrong way or just plain out say something that is completely uncalled for. When I had my first child, my daughter Amelia back in 2013, I loved her with all my heart but hit a roadblock about 3 months in.

PPD can show it’s ugly face in so many ways you guys. I’m just going to give you my personal experience of it. Three months after having her I started getting what other people would call lazy. Then I got to where I just had absolutely no motivation to do anything. The only thing I wanted to do was eat, watch tv, and sleep. I did not however lose motivation to take care of my baby thank the good Lord. I never neglected her once throughout the entire thing. But I neglected my house and myself. I even neglected my husband. I remember sitting in my bedroom with the tv off just crying for hours all day long because I felt worthless and I felt like nobody cared about me. This might sound like a pity party to you or a bit over dramatic but this is what PPD will do to you. A major imbalance of hormones.

This lasted for 3 years, guys. I don’t think it normally lasts that long but I also didn’t get any medication for it because at the time I didn’t realize that it was PPD. I just thought I was a horrible mom and wife. I got so reserved to myself that I actually got mad when visitors would show up at my house unexpectedly.

My depression spiraled out of control so badly that there were dirty diapers laying on my living room floor, there were dishes getting moldy in the kitchen, there were dirty rings in my toilet! Family members stopped coming over after seeing the condition that my house was in because is grossed them out. This deep depression lasted about a year before I started getting a little bit better. Slowly, my mindset kept progressing and now I believe I am a completely different person.

Ladies, I don’t know alot about PPD but I do know that it can come in many different forms. If you feel like this at all after just having your precious baby then please, go see a doctor. It only gets way worse before it gets better. It is really hard and embarrassing sharing this story with everyone on here for the world to see and read but I believe my story needs to be heard…

Chaotic Mornings And Loving It

Hey everyone thank you so much for reading my blog because this is my very first one. I’ve NEVER done this before and I really appreciate your support. So, to kick things off I am just going to go over what is going on in my life on a daily basis and see if anyone can relate especially these moms out here that are just exhausted. Whether it be physically or mentally or both. I know us moms need a great support system and I think if we can band together and vent to each other then it might just make our day a little bit better or even just bearable.

Let’s start with day 1 of my exhausted mom life blogs! Today I woke up at 9:00 this morning to my 7 month old son cooing and playing with his toys in his crib beside our bed. I thought “Oh, ok, maybe since he is happy and content I can catch about 30 more minutes of sleep.” NOPE!! My 3 year old son and 5 year old daughter are quietly laughing trying to be sneaky in their playroom right next to mine but I know what is REALLY going on in the back of my mind. “Oh dear goodness, they are up and torturing my yorkie in his cage by poking him and pushing stuff through his crate and the poor thing is probably so scared he is about to whiz himself, I’d better get up!”

Of course as soon as I get up though my kids start yelling at me “Mommy, I want cereal.” “Mommy, I’m hungry.” “Mommy, can I have a peanut butter jelly sandwich?” About the time I open my mouth to tell them “Just a minute!” my baby starts wailing for food and all 3 dogs start whining and barking. So, here we are at 9:00 in the morning, Just woke up, one eye open, a bad taste in my mouth and CHAOS!!!! SOMEONE TELL ME THIS GETS BETTER AS THEY GET OLDER!!! I’m going to take a wild guess and say no it won’t. After breakfast all I hear is fighting, barking, crying, and my husband yelling “Honey, where are my shoes?!”

But you know what, guys? I love it all. 🙂

I would rather be here dealing with all of this chaos than be alone and not having any of it. My babies are my world and so is my husband. In between all of the fighting and screaming comes the hugs, I love you’s, smiles, laughs, jokes, and overwhelming love. So I can’t help but be so thankful for EVERYTHING that I have. They are my world.
